Sunchoke, also known as Jerusalem artichoke, is a native North American plant valued for its edible tubers and ornamental qualities. This perennial sunflower relative offers both food production and ecological benefits.
Growing to 6-10 feet tall, sunchokes produce bright yellow flowers in late summer to early fall. The edible tubers, which slightly resemble ginger root, develop underground and are harvested in fall or early spring during the “hunger gap” period when nothing else is ready yet. These tubers have a nutty, slightly sweet flavor and can be eaten raw or cooked.
Sunchokes thrive in full sun to partial shade and adapt to various soil types. They’re hardy in USDA zones 3-9 and are notably drought-tolerant once established. If you want your patch to spread, simply care for it and harvest the tubers, leaving some behind. Even small pieces that you miss will grow vigorous plants the next year. This quality makes it excellent for naturalized areas but a potential nuisance in cultivated annual gardens.
One of sunchoke’s key advantages is its high yield and ease of cultivation. It’s also a good source of inulin, a prebiotic fiber. However, some people may experience digestive discomfort when consuming large quantities. Boiling with lemon juice seems to help me digest them better.

Chinese—A variety that comes to us by way of cultivariable. Super productive, large and smooth tubers. This is my favorite sunchoke I’ve tried so far.
Red Fuseau—smaller smoother elongated red tubers, slightly darker leaves.
Stampede—highly productive and vigorous with huge white knobby tubers, plants can reach up to 10-12’.
